Since a gluten (Glu)-free diet is the only way to control Celiac disease, developing a selective tool for monitoring Glu in food products is of medico-legal importance. This study reports the fabrication of a highly advanced platform based on a novel nanocomposite containing nitrogen-doped porous nanocarbon) NPC) and silver nanoparticles (AgNPs), denoted as NPC@AgNPs, for detecting of Glu. MD simulation-empowered green aptasensor selectively traps the analyte in its arm to detect Glu in a wide linear dynamic range from 1 fM to 1 μM, with a detection limit of 0.33 fM, which is much lower than the maximum permissible limit amount of Glu (20 ppm) reported by the International Food Organization. The Glu monitoring in wheat flour samples with the proposed green aptasensor may promise its efficiency in the real world by providing technical support for a valid assay in food safety fields from farm to fork. © 2026
